Celery root, a.k.a. celeriac, is a unique vegetable that is cultivated for its edible stem or hypocotyl as well as shoots. Unlike common celery, it has a bulbous hypocotyl with many small roots attached, making it more like a “root vegetable”. As a matter of fact, the ‘Diamant’ cultivar is predominant in North America.
Description
Celery root, Celeriac or celery originated in the Mediterranean Basin and was mentioned in ancient texts. It was grown for medicinal purposes in early civilizations. Typically harvested when the hypocotyl is 10 to 14 centimeters in diameter, celeriac can be eaten raw or cooked. Its taste is similar to the leaf stalks of common celery.
