- They hold many phytochemical compounds such as capsaicin that have disease-preventing and health-promoting properties.
- Fresh Poblano peppers are excellent sources of vitamin C. 100 g fresh, green poblanos hold 80.6 or 123% of the daily required levels of this vitamin.

- Poblanos are gluten-free, low-sodium peppers suitable for Gluten-sensitive and Celiac disease people.
- Poblano peppers contain an alkaloid compound, capsaicin, which gives them a mildly spicy character. Scientific studies suggest that the role of capsaicin has anti-bacterial, anti-tumor, analgesic, and anti-diabetic properties, at least in some early laboratory studies on experimental mammals. It was also found to reduce LDL-cholesterol levels in obese individuals.
- Poblano peppers compose of other antioxidants such as vitamin A and flavonoids like β -carotene, α -carotene, lutein, zeaxanthin, and cryptoxanthin. Together, these compounds protect cells from the injurious effects of free radicals generated by stress and various disease conditions.
- They are also a good source of B-complex vitamins such as pyridoxine, and thiamin, and minerals such as copper, calcium (10% DRI/100 g), and iron.
Fight Against Cancer
The various nutritional elements found in poblano peppers are known for their role in the fight against cancer. For example, a poblano pepper contains about 25 percent of the recommended daily value of B2 (riboflavin).
This is more than an egg, one of the most widely used vitamin B2 foods. Riboflavin has been shown to have a positive effect on pre-tests with colorectal cancer cells.
In general, riboflavin acts as an antioxidant against cancer cells and is also necessary for the production of glutathione, another anti-cancer antioxidant.
